Best Iced Coffee Popsicles with Dairy Free Milk

This iced coffee popsicle recipe is the perfect way to enjoy a cup of coffee on a hot summer day! Made with dairy free milk and only 4 ingredients. Yum! 

Perfect for a hot day, these easy to make coffee popsicles are the best way to get a kick of caffeine while enjoying a cool treat! They are easy to mix up, dairy free, gluten free, and really allergy friendly. Perfect for kids and coffee lovers alike! 

Super easy to mix together, the most difficult part of this recipe is waiting for them to chill in the freezer.

Ingredients

  • Coffee: You can use cold brew coffee or any leftover coffee from the morning to make these popsicles. I typically have cold brew on hand so that is what I use! 
  • Dairy free Milk: This helps the popsicles be a bit more creamy but not full on like a fudgesicle. See below for different milk recommendations. 
  • Sugar: Helps to make it sweet and more like a frozen dessert. See below for more sugar (and refined sugar free) options. 
  • Vanilla extract: Using a good quality vanilla is important here. It adds a depth of flavor to the coffee and almost helps it to taste like caramel! If you have a double strength vanilla, now is the time to use it. 

Allergy Substitutions 

Use your favorite type of milk in this recipe. The photos in this recipe are made with unsweetened soy milk. However! Rice milk, almond milk, coconut milk, oat milk, hemp milk, any and all of these will work. You just want something milky to balance out the coffee and give it a bit of a creamy texture. 

Tip! Don’t use canned coconut milk when making this. The milk is too rich and overpowers the black coffee. 

If you are not allergic to dairy, you can use heavy cream or your favorite creamer to make this recipe. 

Variations 

  • Make Vietnamese coffee popsicles by replacing the sugar with 2 tablespoons of (dairy free) sweetened condensed milk. There are two varieties of milk to choose from: Coconut and Oat milk! 
  • Want to go refined sugar free? Use coconut sugar, maple syrup, or a few medjool dates in place of the sugar. 

Recommended Equipment 

I really like this popsicle mold from Amazon. It’s made from silicone and is super easy to clean. Popsicle molds like this are the best method for making popsicles since they are designed for that purpose. 

However, as it is a one trick pony in the kitchen, I know a lot of people don’t have one on hand. 

If you don’t have a mold, you can still make these! Use paper cups and stick some plastic wrap over top. Then, you can pop a stick in the middle and freeze. I tend to use wooden popsicle sticks as I find they don’t impart a flavor into the popsicle. 

Instructions

Starting with your coffee, make sure that it is slightly warmed and add the sugar. Mix until the sugar has dissolved. I warmed my coffee to about 100F and mixed for about a minute. 

Next, add the remaining ingredients of the dairy free milk of your choice, vanilla extract, and pinch of salt to the coffee and sugar. Mix it all together.

Pour the coffee mixture into the popsicle mold and cover. Don’t forget to add the popsicle sticks. 

Freeze for at least 6 hours, but overnight is best. That way you know they will freeze up.

FAQs

Can I make this with espresso powder? 

Sure! Just prepare espresso as directed so that you have 2 espressos. Combine with the rest of the ingredients as directed. Note that espresso will have a more bold, strong coffee flavor than cold brew. 

Can I make this with decaf coffee? 

Of course! Prepare as directed and you can still enjoy these treats. 

Can I make this with Instant coffee? What about a french press? 

Yes! You just want to use a good coffee made in your favorite method of coffee preparation. Don’t use hot coffee when making this recipe as the silicone mold goes right into the freezer after mixing it together. But any kind of coffee that you love is the best kind of coffee. 

How can I easily remove the popsicles from the mold? 

If you have a metal, silicone, or plastic mold, pop the mold into a bowl of warm water for a minute. You can also run some warm (but not hot) water on the outside of the mold. Give it a little wiggle and it should release.

How to Store 

Keep any leftover popsicles in a freezer safe container for up to one month.
