Saute
First, saute the onions, carrots, and parsnips in a little bit of olive oil or broth in a large pot.
Cook
Add the remaining ingredients. Bring this to a boil over medium heat and let it cook at a simmer for a good 45 minutes over medium heat.
Serve
After 45 minutes you are done! Add a bit of lemon juice and olive oil to finish the soup before serving.
