Gluten Free and Vegan S’Mores Cake

This s’mores cake is gluten free, vegan, and top 8 allergy free. A delicious chocolate cake filled with creamy marshmallow fluff frosting and topped with roasted marshmallows and chocolate ganache.

When I was a kid, my official start to summer was Memorial Day weekend. My family would all travel to my grandparents cottage on a lake where the unofficial food was s’mores.

 

My summer looks a little different now, but I still love s’mores and wanted to recreate my favorite summer treat in a cake!

 

This cake tastes just like a s’more with a chocolate cake, roasted marshmallow frosting, and graham cracker sprinkles all on top. Plus, it’s gluten free, vegan, and top 8 allergy free!

 

It requires a few steps to make, so let’s get started!

 

How to Make a Gluten Free and Vegan S’mores Cake

 

This gluten free and vegan s’mores cake is made up in 3 easy steps.

 

Step one, make your chocolate cake. You can make a cake from scratch, for which my gluten free and vegan ultimate chocolate cake is perfect! You can also enjoy a box mix if you find one that is allergy friendly. Either way, make according to directions in either a 9×13 baking pan or two 8-inch pans.

 

Step two is to make all of the frostings. The marshmallow fluffy frosting is easily whipped together in a stand mixer or with a hand mixer. The chocolate ganache is melted in the microwave in about 45 seconds, making it the quickest part of this cake!

 

Step three is assembling. You can either layer your cakes together (and can cut out small circles out of the 9×13 size for a cute 4-inch cake!) or you can leave the cakes a single layer and frost only the tops. Both result in the best allergy free s’mores cake.

 

Step four is eating the cake, but I don’t think you need me to tell you that!

 

How to Make Marshmallow Frosting

 

The secret to any frosting is to whip it.

 

Whipping the butter and sugar together incorporates air into the frosting, which means your final result will be light and fluffy.

 

This marshmallow frosting is made with marshmallow fluff, butter, shortening, sugar, and vanilla.

 

If you can’t find egg-free marshmallow fluff in your area, you can use Dandies vegan marshmallows melted with a little oil as a 1:1 replacement.

How to Make Chocolate Ganache

 

Did you know you only need 2 ingredients to make the best ganache ever? Yup! Ganache is made by melting chocolate and milk together in the microwave for about 30-45 seconds. Mix it together and it will develop into a thick fudge like consistency. Add more milk for a runnier texture (which is what we need for this cake!) or add less milk to make candy truffles with.

 

Can you make this vegan? Of course! Any non-dairy milk with a richer consistency works perfectly. Think milks like soy, oat, coconut, or almond. Milks like rice are thin and filled with more water, which can cause the chocolate to seize up.

 

Never add water to the chocolate! It will seize up, turn grainy, and you’ll be making more of a science experiment than ganache.

Allergy Variations for Gluten Free and Vegan S’mores Cake

 

Obviously, we want to make sure that this is a cake that suits you and your allergy needs! Let’s break down the ingredients.

 

Chocolate Cake: If you have allergies to any of the top 8 or top 14, I recommend that you use my ultimate gluten free and vegan chocolate cake. It is one of the most allergy friendly cakes around!

 

Butter: Use a non-dairy butter of your choice. My personal favorite to work with is Earth Balance for their ease of use, availability, and taste. They even make a soy free version that works perfect!

 

Marshmallows: If you can’t find a marshmallow fluff that is egg free in your area, I recommend that you use Dandies marshmallows. They are free of gluten, eggs, wheat, dairy, peanuts, tree nuts, gelatin, corn, and are kosher! Simply melt about a cup of marshmallows in the microwave with a spoonful of oil. Stir until you have a melted marshmallow to use as a 1:1 replacement for the marshmallow fluff!

 

Milk: Same as the butter, use a non-dairy version of your choice. Milk is a fantastic thing to swap in baking as it almost always works. I just would avoid using rice milk in making the ganache as it contains too much water and causes my chocolate to seize up.

 

Chocolate: My chocolate that I purchase is always allergy free. Brands like Enjoy Life or now even Toll House make allergy free varieties. Use what you can find!

 

How to Assemble Gluten Free and Vegan S’mores Cake

 

To assemble a single layer cake: leave the cake in your glass baking pan. Top with a half batch of marshmallow fluff frosting. Drizzle chocolate ganache on top as artistically as you like. Sprinkle some crumbled graham crackers on top if desired. Finally, top with marshmallows and using a long lighter, set some of them on fire and blow them out for that authentic roasted marshmallow campfire look!

 

To assemble a layered cake: Remove the cakes from their pans. Level the cakes and set the first layer on your cake stand or plate. Spread a generous amount of marshmallow fluff frosting on top. Lay the next cake layer on top. Frost the entire batch of marshmallow frosting over the cake. Pop it in the fridge to chill for about 20 minutes to help the frosting set. Remove from fridge and drizzle with chocolate ganache. Sprinkle graham crackers on top if desired. Finally, top with marshmallows and using a long lighter, set some of the marshmallows on fire and quickly blow them out for the authentic roasted marshmallow campfire look!

Ingredients

  • 1 chocolate cake in two 8-inch pans or one 9x13 pan
  • 1 gluten free grahmn cracker for sprinkling

Marshmallow Frosting

  • 2/3 cup marshmallow fluff or melted Dandies marshmallows
  • 1/2 cup butter or non-dairy butter
  • 4 tbsp vegetable shortening
  • 2 tsp vanilla
  • 1 1/2 cups powdered sugar
  • 2-3 tbsp milk or non-dairy milk of choice

Chocolate Ganache

  • 1/2 cup chocolate chips
  • 1-2 tbsp milk or non-dairy milk of choice

Instructions

  • Make the chocolate cake according to directions. Let cool completely before assembling.
  • Make the marshmallow frosting by combining the butter, vegetable shortening, and marshmallow fluff in your stand mixer or in a large bowl for a hand mixer. Whip until light and fluffy, about 3-4 minutes. Now, add your sugar and vanilla. Whip again. If you need to thin the consistency, add your milk, in teaspoon full increments. You can always add more but you can't take away! If you are making a 9x13 cake, you can halve the recipe and have enough to frost the cake.
  • Now make the chocolate ganache. Add your chocolate chips and milk into a microwave safe bowl and microwave for 30-45 seconds. You want it to be just melted. Remove from the microwave and start stirring! Some of the chocolate may not be melted but the residual heat from the chocoalte will finish melting the chips. Add more milk slowly if wanting to change the viscosity.
  • Finally, assemble the cake! If making a single layer cake, leave the cake in your glass baking pan. Top with marshmallow fluff frosting. Drizzle chocolate ganache on top as artistically as you like. Sprinkle some crumbled graham crackers on top if desired. Finally, top with marshmallows and using a long lighter, set some of them on fire and blow them out for that authentic roasted marshmallow campfire look!
  • If making a multiple layer cake, Remove the cakes from their pans. Level the cakes and set the first layer on your cake stand or plate. Spread a generous amount of marshmallow fluff frosting on top. Lay the next cake layer on top. Frost the entire batch of marshmallow frosting over the cake. Pop it in the fridge to chill for about 20 minutes to help the frosting set. Remove from fridge and drizzle with chocolate ganache. Sprinkle graham crackers on top if desired. Finally, top with marshmallows and using a long lighter, set some of the marshmallows on fire and quickly blow them out for the authentic roasted marshmallow campfire look!

To store this cake: Place in the fridge for up to 3 days.
