Top Tips for Egg Free Baking 

  1. Chill the dough. If the cookie dough is wet and sticky (meaning it literally sticks to your fingers if you touch it) I recommend chilling the dough. This will help the fats in the cookie firm back up so that it doesn’t turn into a cookie puddle in the oven. This is super  important for egg free baking where the egg isn’t there to help hold the cookie together. Even if it’s for 15 minutes, always chill the dough. 
  2. Bake one tray at a time. You will get the best results possible when you only have one cookie tray in the oven at a time. The air can circulate in the oven better when it only has to maneuver around one tray. 
  3. Use parchment paper. I love using parchment paper in my baking because not only does it make cleaning up super quick, it also is extra insurance to make sure my cookies never stick to the tray. 
  4. Let the baked cookies rest. I’ve found that egg free cookies do best when they are cooled on the hot cookie tray for 5 to 10 minutes before transferring them to a cooling rack to cool completely. Sometimes, I just let them cool on the cookie tray fully. Letting them set after baking helps them to stick together.
